With no predators left, the population has to be managed to keep numbers at a sustainable level to protect the environment from overgrazing.Wild venison is a healthy and sustainable meat source, which is artisanally produced into a range of charcuterie by Jan Jacob himself.The fabulous thing about serving charcuterie is that you can keep it as simple as you like or create a platter with a variety of cheeses, fruits, crackers, chutneys and preserves.
